Chicken Wings Soup: Simple Method

Ingredients

  • 2 lb (900 g) chicken wings
  • 8 cups (1.9 L) water
  • 1–2 Tbsp ghee, tallow, or real butter
  • Salt to taste

Method

  1. Rinse wings and pat dry; place in a pot with water and salt.
  2. Bring to a gentle simmer; skim foam. Add ghee/tallow/butter.
  3. Simmer 60–90 minutes on low until wings are tender and broth tastes rich.
  4. Optional yolk finish: in a bowl, whisk 2–3 egg yolks. Ladle in a little hot broth while whisking to temper; remove pot from heat and whisk yolks into the soup. Do not boil after adding.
  5. Taste and salt to preference. Serve hot.

Make a large pot. Cool quickly (ice bath), portion into jars, and chill. Add yolks only when serving, not for storage.
