Chicken Wings Soup: Simple Method
Quick Answer
Simmer chicken wings with salt and ghee/tallow/real butter until tender (60–90 min). Skim occasionally. Optional: whisk in 2–3 egg yolks off heat for a silky finish.

Ingredients
- 2 lb (900 g) chicken wings
- 8 cups (1.9 L) water
- 1–2 Tbsp ghee, tallow, or real butter
- Salt to taste
Method
- Rinse wings and pat dry; place in a pot with water and salt.
- Bring to a gentle simmer; skim foam. Add ghee/tallow/butter.
- Simmer 60–90 minutes on low until wings are tender and broth tastes rich.
- Optional yolk finish: in a bowl, whisk 2–3 egg yolks. Ladle in a little hot broth while whisking to temper; remove pot from heat and whisk yolks into the soup. Do not boil after adding.
- Taste and salt to preference. Serve hot.

Broth lightly golden with small fat pearls; meat pulls easily from bone. With yolks: broth looks glossy and slightly thickened.
Batch notes
Make a large pot. Cool quickly (ice bath), portion into jars, and chill. Add yolks only when serving, not for storage.
Variations (optional)
- Finish bowls with a spoon of roasted marrow or extra ghee.
- Add a split garlic clove to the pot; remove before serving.

Fridge: 4 days. Freezer: 2–3 months. (Yolk-finished bowls are best fresh.)
