Today has been a day of holding my own boundaries—financial and ethical.
For no apparent reason, I hadn’t eaten much, so on my way back from UPS I picked up one of my favorite “snacks”: lamb loin chops.

Lamb loin is a snack to me because I can get it ready in a jiffy.

What you need

  • 7 lamb loin chops
  • Salt to taste
  • Optional: pepper or other seasonings (I usually skip them—most days, I prefer to drink my salt and taste the natural flavor of the meat).
  • An air fryer

How I make it

  1. Place the lamb loins in the air fryer tray in a single layer, with none on top of the other.
  2. Set the cooking mode to Air Fry and the temperature to 400°F (about 200°C).
  3. Air fry for about 20 minutes, or until they’re cooked to your preferred doneness.
  4. When they’re done, I pour all the rendered fat back over the chops. Most times I just eat them plain—fat and all—and they satisfy me completely every time.

Optional sides

If I want more, I’ll serve them with:

  • A small glass of whole or full cream, or
  • A couple of rich egg yolks

But honestly? These chops on their own are often enough.
