Cabbage & Mushroom Mineral Salad with Creamy Avocado-Lime Dressing

There are some meals that do not just fill the body… they land.

This cabbage and mushroom salad came together slowly and intuitively after a morning at the farmers market and a deep need for something fresh, mineral-rich, grounding, and alive. The soaking process softens the cabbage while allowing the citrus, mushrooms, salts, and water to begin forming a deeper flavor foundation before everything is brought together.

The creamy avocado-lime dressing carries warmth from ginger, turmeric, cayenne, garlic, and black pepper, while the mushrooms, greens, and cabbage bring texture, freshness, and crunch.

This is the kind of meal that feels vibrant without being heavy. Simple without being empty. Quick nourishment can still be kind and gentle.

And honestly… it went where I sent it.

Ingredients

For the cabbage soak

  • 1/4 medium cabbage, finely sliced
  • 15 shiitake mushrooms
  • Spring water
  • 2 teaspoons Himalayan salt
  • Juice from additional lemon wedges
  • 2 lemon rind quarters

For the dressing

  • 1 whole fresh lemon
  • 2 key limes
  • 1 avocado
  • 1 handful baby spinach
  • 6 cloves fresh garlic, chopped and allowed to sit briefly
  • 1/2 teaspoon bee pollen
  • 1 teaspoon ginger powder
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper
  • Generous black pepper
  • Celtic sea salt to taste
  • Spring water as needed for blendingh

Optional additions

  • Extra avocado, diced
  • Additional lemon or lime juice drizzled over the salad before serving

Preparation

  1. Cut the cabbage into 2 or 3 blocks or chunks and place into a deep bowl.
  2. Add spring water, Himalayan salt, mushrooms, additional lemon juice, and lemon rind quarters to the bowl. Allow the mixture to soak for approximately 2 hours.
  3. Remove the cabbage and mushrooms from the soak, slice the cabbage finely, and place into a large mixing bowl.
  4. Add the following into a blender or food processor:
    • spinach
    • avocado
    • garlic
    • powdered spices
    • black pepper
    • Celtic sea salt
    • bee pollen
    • 2 key limes cut into quarters
    • 2 softened lemon rind quarters from the soak
    • spring water as needed
  5. Blend until smooth and creamy.
  6. Pour the dressing over the cabbage and mushrooms and mix thoroughly.
  7. Finish with additional citrus juice if desired. You may also dice extra avocado on top before serving.

This dish may serve as:

  • a nourishing full meal for one,
  • or a fresh appetizer for 3–4 people.
