Cooked Ketovore Roasted Drumstick with Egg, Arugula & Shrimp Skillet
Short Description
A warm cooked ketovore plate with roasted pasture-raised drumstick, eggs, arugula, garlic, onion, shrimp, warming spices, and a fresh lemon finish.

Ingredients
All organically cultivated and pasture-raised where possible.
- 1 chicken drumstick
- 1 lemon
- 3 eggs
- Himalayan salt, to taste
- Celtic sea salt, to taste
- 1 teaspoon powdered ginger
- 1 teaspoon powdered turmeric
- ¼ teaspoon cayenne pepper
- Generous black pepper
- 2 teaspoons tallow
- 2 teaspoons ghee
- 1 handful arugula
- ½ onion, sliced or chopped
- 4 cloves fresh garlic, chopped
- 4 white Gulf shrimp, unshelled
Preparation
Rub the chicken drumstick with Himalayan salt.
Roast the drumstick in the air fryer using the roast setting for about 25 minutes. Cooking time may vary depending on your air fryer, so adjust as needed.
While the drumstick is roasting, add the tallow and ghee to a stainless steel or cast-iron pan.
Set the heat to about 4 on a range of 0 to 8. Cover the pan briefly so the fats can melt.
Cut the onion and garlic. Keep the garlic aside at first.
After about 6 minutes, add the onions to the melted fat and season lightly with salt.
Once the onions begin to sizzle, add the shrimp, ginger, turmeric, cayenne pepper, and black pepper.
Allow the mixture to cook for about 10 minutes, checking occasionally to make sure it does not burn.
Lower the heat to about 2.
Add the 3 whole eggs and gently fold them into the mixture. Allow them to cook for about 10 minutes, or until they reach your preferred texture.
Add the arugula and chopped garlic (or another vegetable of your choice). If desired, sprinkle a little Celtic Sea salt over the top.
Cook for another 3 to 5 minutes, depending on how soft or crunchy you like your greens. I like my vegetables a little crunchy and my egg yolks slightly runny.
Remove from heat once the ingredients are gently mixed and cooked to your liking.
Serve with lemon. I squeezed the lemon over the roasted chicken.
