Raw Ketovore Vegetable Cocktail with Microgreens, Little Gems & Green Smoothie

Ingredients

All organically cultivated where possible.

Salad

  • 2.5 oz arugula and kale
  • 2.5 oz crunchy petite red and green little gems
  • Celtic sea salt, to taste
  • Unsalted, unroasted pumpkin seeds, to taste

Salad Dressing

  • ¼ teaspoon bee pollen
  • ½ lemon
  • 1 key lime
  • 1 finger ginger
  • 1 finger turmeric
  • Generous black pepper
  • ¼ teaspoon cayenne pepper
  • Pinch of Celtic sea salt
  • 3 garlic cloves
  • 8 teaspoons olive oil
  • 4 tablespoons apple cider vinegar with the mother

Green Smoothie

  • 4 teaspoons olive oil
  • Clean spring water, to desired consistency
  • 1 handful arugula
  • ½ avocado
  • 2.5 oz micro broccoli
  • ½ lemon
  • 1 key lime
  • Pinch of Celtic sea salt
  • ¼ teaspoon bee pollen
  • 1 mini cucumber
  • 1 small finger ginger
  • 1 small finger turmeric
  • Generous black pepper
  • ¼ teaspoon cayenne pepper
  • 2 cloves garlic
  • 2 tablespoons apple cider vinegar with the mother

Preparation

Salad Dressing

Chop the dressing ingredients as needed.

Add all dressing ingredients to a blender or food processor.

Blend until smooth and fine.

Salad

Place the little gems on your plate.

Add the arugula and kale on top.

Sprinkle a little Celtic sea salt over the greens.

Scatter unsalted, unroasted pumpkin seeds over the salad.

Pour the dressing over the greens.

That’s it.

Green Smoothie

Add all smoothie ingredients to a blender or food processor.

Add spring water based on your desired consistency. I made mine drinkable.

Blend until very smooth.

Serve with the salad and enjoy.
