Raw Mushroom & Microgreens Evening Plate
A Light, Enzymatic Evening Plate
This raw plate brings together microgreens, mushrooms, fresh citrus, warming roots, and a vibrant dressing.
It is light, fresh, and intentionally simple… an evening-style plate that feels clean, hydrating, and gently nourishing.

Ingredients
- 2.5 oz micro mix (arugula, broccoli, cabbage, kale, kohlrabi, radish)
- 2.5 oz micro kale
- 10 shiitake mushrooms
- ½ onion
- 4 cloves garlic
- ½ lemon
- 1 key lime
- 1 medium avocado
- 1 mini cucumber
- 1 medium finger fresh turmeric
- 1 medium finger fresh ginger
- 8 teaspoons olive oil
- 4 tablespoons apple cider vinegar (ACV)
- Celtic sea salt, to taste
- Himalayan salt (for soaking mushrooms)
- Generous black pepper
- ¼ teaspoon cayenne pepper
- ½ teaspoon bee pollen
- Splash of clean water
- Pumpkin seeds (unsalted, unroasted) or nuts/seeds of choice
- White apple cider vinegar (for soaking)
Preparation
Begin by soaking the shiitake mushrooms in water with a pinch of Himalayan salt and a small amount of white apple cider vinegar for about 15 minutes. This gently cleans and rehydrates them.
After soaking, cut the mushrooms into halves and set aside.
In a clean bowl, add the micro mix and micro kale. Gently fluff the greens so they are light and not compacted.
Slice the onion finely and place it over the greens as desired.
Slice the mini cucumber and place it over the greens as desired.
Slice the garlic and set aside.
Wash the ginger, turmeric, lemon, and key lime.
Dressing
Using a blender or food processor:
Add:
- chopped garlic
- ½ lemon (seeds removed)
- key lime (cut and seeds removed)
- fresh ginger and turmeric
- cayenne pepper
- black pepper
- Celtic sea salt
Add olive oil, apple cider vinegar, and a small amount of clean water to reach your desired consistency.
Blend until smooth.
Pour into a glass jar. This dressing makes about 2 servings.
Assembly
Place the soaked and sliced mushrooms over the greens.
Cut the avocado into cubes and place gently over the plate.
Sprinkle seeds or nuts as desired.
Add the sliced garlic if you enjoy a stronger flavor.
Drizzle the dressing over the plate as desired.
Serve immediately and enjoy.
